The needs tab has a box at the bottom right for prisoner category. Maybe that allows you to see by the inmate types (low, normal, max, etc.)
the red bar at the food food thingy means that some prisoners don't eat and the green bar means that they have eaten so some of your prisoners don't get to eat for some reason and also, your risk was high because blue gang leader was in solitary so next time when a gang leader is in solitary keep an eye on the risk bar
Prisoners in Solitary have food brought to them. Once I have Permanent Punishments, I have the most dangerous Inmates locked in Solitary for days in order to Suppress them. Once Suppressed, I put them in permanent Lock-down, and they still have food brought to them, like a Death Row inmate.
Like I've suggested, Max Sec don't receive many privileges.
You need to save up money and hire thousands of guards.
One thing I like to do is set up a fairly large room for security (something like 9×12) and make a 4×4 area in the corner a staff room, so guards don't even have to leave the room to take a break.
