I love the new flooring! I also like the new courtyard, I do think it's a touch too big if it's gonna stay that empty however. But that got me thinking, what if you made a separate huge farming facility? Could be cool I think but up to you
Also with schedules, why not try to give them a more standard schedule? Staggered obviously to reduce interaction and risk of fights, but in general: wake up/lockup (so they can shower, relieve themselves, etc), breakfast, 4 hours of straight work/free time (specifically that because of the store, no one can buy anything if they're in lockup), lunch, free/yard time, 4 more hours of work/free time, dinner, yard time, free time, lock up, sleep. Right now it seems a bit less organized.
Lastly, I can't recall your punishment policies exactly but I reckon they could be more comprehensive. Like 72 hours for attacking staff and reducing the punishment for contraband to mere searches (afterall you want it as a cash flow), for example.
The longer you go without a major incident the more money you get. When you check your finances early on it looks like you recently had an incident. Perhaps that's why your $/day went down.
You should add a gate for the swat or root team going through the middle of the prison since they can quickly get anywhere in the prison

do you prisoners have access to garden? that maybe why they can't take gardening class.
Did Charlie seriously to see prisoners walking outside the whole episode? That's where they got all the phones, lol
